Flavours according to season

You can taste the changing seasons in our quality selection

The fresh, domestic flavours of spring and summer, the yield of the waters, fresh autumn berries, mushrooms and game all offer wonderful experiences worth trying. The dark winter complements our selection with deeper flavours brought out by longer cooking times and different seasonings. Each changing month and season brings something new onto our kitchen work boards, with an emphasis on our Northern flavours.

Fish, particularly our domestic freshwater fish and shellfish are among the prestigious ingredients we cherish. Also meat lovers will find we offer the best of quality with numerous alternatives to choose from. Berries, mushrooms and vegetables create nuances that complement the bright Northern flavours we are able to provide.

We acquire all of our ingredients from the Oulu Market Hall situated conveniently next door, or from our other local suppliers – always fresh.

the people and the kitchen

Restaurateur Tommi Tuhkanen manages our kitchen that emanates deep respect and love for food. Experience and professional skill acquired all around the world during the years provided a delicious foundation for establishing Restaurant Hugo. The restaurant originated from the idea to serve flavours of the North with a twist of French cuisine.

In the Hugo kitchen, dishes come together in a traditional manner by hand, still utilising modern methods of preparation. Our professional staff guides you into the Hugo world of flavours and helps you to choose the most appropriate combinations of food and drink.

Restaurant Hugo provides a comfortable and relaxed venue for social evenings and occasions for everyone who relishes excellent food.
